I would like to know the pros and cons for each configuration and what cable size would I need for each.

@Wade Thomas The first configuration will save more cables than the second. Since the 2 ways are both 2s2p, they share the same output current and the cable size should be the same.

@Bryce Freeman Home is an off-grid cabin. .. I have 4 Eco-Worthy ICO-SMC-120W solar panels. Each individually, disconnected, reads voltage at about 21 or 22 volts, this morning. .. I have a ProStar PS-30M solar charge controller .. I have two deep cycle 12 volt batteries. .. Should I connect the solar panels in series or parrallel?
@Robert Thomas I would connect two in series then those two in parallel just to drop the amps in the wire to the controller. Lots of things to consider will any panels get shaded through out the day? If so and you have large enough wire then wiring all four Parallel are the better option. Max open voltage should be 60 volts make sure you don't go over that.
